Pistachio Choux au Craquelin | Crunchy Cream Puffs with Pistachio Cream
Cream Puffs with Crunchy Craquelin filled with an unctuous pistachio custard cream.

This is an east step by step tutorial on how to make delicious and easy cream puffs with pistachio, the puffs are so crunchy and delicious, the craquelin provides a nice crunchy layer and the a vrey cream custard tha we will be aromatizing with the pistachio paste that you will also learn how to make from scratch! Recipe:
Pistachio Paste:
80g Pistachios | 1/2 cup
20g Sugar | 1.5 tbsp
3 Tbsp Oil (vegetable, almond, walnut or cooking oil)
3 Drops Almond Extract
Craquelin:
50g Butter | 3.5tbsp
60g Brown Sugar | 1/3cup + 1tbsp
60g Flour | 1/2 cup
Green Food Dye
Choux Pastry: (for 14units)
30ml Milk | 2tbsp
35ml Water | 2.5 tbsp
A pinch of Salt
2 tsp Sugar
1 Egg
40g Flour |4.5 tbsp
26g Butter | 2tbsp
Custard Cream | Cream Patissiere:
250ml Milk | 1cup + 1 tbsp
2 Egg Yolks
45g Sugar | 1/4 cup - (minus) 1 tbsp
20g Cornstarch | 2.5 tbsp
1tsp Vanilla Extract
2tbsp Pistachio Paste (recipe above)
You can start by making the cream first and then bake the choux while it is cooling. If in Hurry, start baking the puffs first and then prepare the cream while they are baking as they need about 30 min to bake and cool. You can use store bought pistachio paste and add it ro the custard cream!
If you would like the crean lighter, you can beat 100g of whipping cream with 1/2tbsp icing sugar and fold the pistachio custard cream into it!
