How does Rubirosa make their famous crust so thin??? 🍕
They use a 2-stage stretching process!
First, they open the dough ball into a skin (about 75% of the final size).
Next, they fold the semi-opened dough into a little pocket to rest before use. This downtime allows the gluten to relax so the dough can go the distance.
When the order comes in, they take a pocket and finish the stretch by hand.
This process probably developed out of necessity to speed up the production process, but the byproduct is that it results in a super thin crust without the need for a rolling pin!
