Everhot induction hob - Watercress Soup
Ingredients
50g butter
2 medium onions
3 shallots
salt and pepper to taste
Pint of Vegetable or Chicken stock
2 x bags of watercress
Saute the onions until golden brown
Add diced potatoes, stock and some black pepper
Cook until soft
Add watercress for one minute
Remove from heat
Blend until smooth
Season to taste
Serve with fresh bread
For a twist add chilli or cream fresh.
