Chicken Biryani Recipe
Ingredients
For rice
Basmati rice – 1 kg
Water – as needed
Salt – 1½ tbsp
Whole garam masala (2 bay leaves, 4 green cardamom, 1 cinnamon stick)
Green chilies – 2
Oil – 2 tbsp
For chicken masala
Chicken – 1 kg
Onions – 4 large (thinly sliced)
Tomatoes – 3 (chopped)
Yogurt – 1 cup
Ginger garlic paste – 2 tbsp
Red chili powder – 2 tsp
Turmeric – 1 tsp
Coriander powder – 2 tsp
Biryani masala – 2 tbsp
Salt – to taste
Green chilies – 3 (slit)
Fresh coriander & mint – 1 cup (chopped)
Lemon juice – 2 tbsp
Oil – ½ cup
For layering
Saffron or yellow food color – few drops (mixed in milk)
Fried onions – handful
Ghee – 2 tbsp
Method
Cook rice
Wash rice and soak for 30 minutes.
Boil water with salt, whole spices, green chilies, and oil.
Add rice and cook till 70% done. Drain and set aside.
Prepare chicken masala
Heat oil, fry onions till golden brown.
Add ginger garlic paste, fry 1 minute.
Add tomatoes, cook till soft.
Add yogurt, spices, salt, and biryani masala.
Add chicken and cook till tender and oil separates.
Add mint, coriander, green chilies, and lemon juice.
Layering
In a big pot, spread a layer of rice.
Add chicken masala layer.
Repeat layers, finishing with rice on top.
Add saffron milk, fried onions, and ghee.
Dum (steam cooking)
Cover tightly and cook on very low flame for 20–25 minutes.
Serve
Gently mix and serve hot with raita and salad 😋
