🍰 Vanilla Cake Sponge Recipe (Soft & Fluffy)




This recipe gives you a soft, light and bakery-style vanilla sponge – perfect for birthdays and customized cakes (great for your baking business too 😉).
🧁 Ingredients (1 pound / 8-inch cake)
2 cups all-purpose flour (maida)
1 cup sugar (powdered or caster)
4 eggs (room temperature)
1 cup oil (or ½ cup oil + ½ cup melted butter)
1 cup milk (room temperature)
1 tbsp baking powder
½ tsp baking soda
1 tbsp vanilla essence
1 pinch salt
👩🍳 Method
Preheat oven to 170–180°C for 10 minutes.
Grease and line your cake pan with butter paper.
In a bowl, beat eggs and sugar for 3–4 minutes until light and fluffy.
Add oil and vanilla essence. Mix well.
In another bowl, sift flour, baking powder, baking soda, and salt.
Now add dry ingredients into wet mixture gradually.
Add milk little by little and mix gently (don’t overmix).
Pour batter into prepared pan.
Bake for 30–35 minutes or until toothpick comes out clean.
