Chicken Katsu | Japanese Crispy Fried Chicken Cutlet

2 chicken breast (~500g)

¼ tsp sea salt
½ tsp cracked black pepper

½ cup plain flour
¼ tsp salt
⅛ tsp white pepper
¼ tsp garlic powder
1 egg
90ml water
2 cup panko breadcrumb

Vegetable oil

Slice chicken breast horizontal so that the thickness is halved.
Lightly pound on both sides so make the meat more tender and even in thickness.
Season with sea salt and black pepper.

Prepare batter by mixing plain flour, salt, white pepper, garlic powder, egg, and water until well combined.
Add chicken to the batter and mix until well coated.
Coat each piece of chicken with panko until well coated.

Heat vegetable oil to medium heat.
Fry chicken for 10 mins until golden brown, turning every 2-3 mins.
Drain chicken and allow to cool for 3-4 mins.
Slice chicken and serve immediately.
