►Ingredients for the Chicken and Chips

►Chicken Prep

3 garlic cloves
4 sprigs of thyme
2 tsp smoked paprika
2 tsp black pepper
2 tsp sea salt
2 tsp sumac
5 tbsp sunflower oil

2 tsp smoked paprika will be applied later

►For the Gravy

2 medium size onions
3 tbsp oil
Pinch of salt
50g butter
50g plain flour
5 cups chicken stock
1 - 2 sprigs of thyme
1 tsp black pepper
Salt to taste
1 - 2 tsp worcestershire sauce
1/2 tsp msg
Leftover juices from the chicken

► Mushroom Puree

7 chestnut mushrooms
1 shallot
2 garlic cloves
2 tbsp oil
1 sprig of rosemary and thyme
1 tbsp white vinegar
1 tsp black pepper
1/2 tsp salt
1/2 cup double/heavy cream
30g butter

►Chips

Frozen chips as required
1 tsp smoked paprika
1 tsp cayenne pepper
2 tsp salt

►Drink

1/2 cup fresh raspberries
2 slices of lemon
1 slice of lime
1 spring of thyme
1 tbsp sugar or syrup to taste
2 tbsp raspberry syrup
Ice
Soda water
