食譜:
月餅皮
12個*30克
(75克模具)
轉化糖漿140克
花生油45克
梘水4克
中筋麵粉200克
餡料:
五仁餡6個✖️45克
堅果90克(烤香)
水果乾45克
蜂蜜15克
食用油15克
白蓮蓉110克
鹹蛋黃餡6個
鹹蛋黃+白蓮蓉餡=45克✖️6
表面蛋黃液:
蛋黃1個
食用油2克
蜂蜜3克
烘烤:
果仁烘烤溫度:
160°C
烤10~15分鐘
咸蛋黃烘烤溫度:
170°C
6~8分鐘後,泡入油4小時以上(或隔夜,隔天)
月餅烘烤:
烤箱(200°C)預熱15分鐘後
第一次烘烤
190°C烘烤5~6分鐘
取出晾涼10分鐘後,刷蛋黃液
第二次烘烤
150°C烘烤8~10分鐘
取出晾涼15分鐘,刷蛋黃液
第三次烘烤
160°C烘烤10~15分鐘
❣️Tips:
月餅出爐後,晾涼後放入密封盒子,回油2天後變軟更好吃。

Fillings:

Surface egg yolk liquid:
1 egg yolk
2 grams of cooking oil
3 grams of honey
bake:
Nut baking temperature:
160°C
Bake for 10 to 15 minutes
Salted egg yolk baking temperature:
170°C
After 6 to 8 minutes, soak in the oil for more than 4 hours (or overnight or the next day)
Mooncake baking:

❣️Tips:
After the mooncakes come out of the oven, let them cool and put them in a sealed box. They will soften and taste better after 2 days of oil return.
