Banana Cream Pie, Best Old Fashioned Southern Cooks
MASTER COOKBOOK RECIPE #431 BANANA CREAM PIE
Ingredients:
2 med/large ripe bananas
2 1/2 cups milk
2 large eggs
1/2 cup granulated sugar
1/3 cup all-purpose flour
1/4 tsp salt
3 Tbsp salted butter
1 tsp vanilla extract
1 cup graham cracker crumbs
graham cracker crust, Recipe #452 (see below)
Instructions:
Whisk eggs, then add milk, sugar, flour, and salt well. Microwave on high for 2 minutes, then remove and whisk thoroughly. Return to the microwave for an additional 3 minutes, then remove and whisk again. If it is not yet thick, microwave for an additional 2 minutes or until it has thickened. Remove and stir in vanilla and butter. Pour half of the pudding into the shell. Thinly slice bananas and lay over the pudding. Sprinkle with graham cracker crumbs. Pour in the remaining pudding. Chill and top with whipped cream before serving. Note: When microwaving puddings, continue cooking until they thicken.
Microwaves have different wattages, and some take longer to cook. They will not thicken in the
refrigerator.
MASTER COOKBOOK RECIPE #452 GRAHAM CRACKER PIE CRUST
Ingredients:
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
1/4 cup salted butter
Instructions:
Place crackers in a gallon zip lock bag, crush with a rolling pin. Melt butter in a bowl, add sugar and cracker crumbs, and mix. Press onto a pie plate and bake 10 minutes at 350°F. Cool before filling.
Option: instead of baking, microwave it 90 seconds then chill before filling.
