Protein Cake Pops
For coating:
2/3 cup (125g) chocolate chips
1 tsp. coconut oil
For Cake Pops:
¼ cup rolled oats
½ medium banana (about 3”), very ripe
3 TBSP vanilla oat milk, or any milk or milk alternative
3 scoops Herbalife Formula 1, any flavor
3 scoops Herbalife Protein Drink Mix, any flavor
8 6-inch cake pop sticks
Candy sprinkles, crushed nuts, crushed graham crackers, etc for toppings
Cake pop stand or piece of styrofoam
Place a sheet of waxed paper on a plate and set aside.
For coating: To melt chocolate you can either: 1) place chocolate chips and coconut oil in a small saucepan and place over low heat, stirring until chocolate is just melted; 2) melt chocolate and coconut oil in the top of a double boiler over low heat; or 3) melt chocolate and coconut oil in a chocolate melting pot. Maintain a very low heat under the saucepan while you prepare the cake pops.
For cake pops: Place rolled oats in the blender and blend into a flour. Add banana and oat milk, and blend again until mixture is well combined. Transfer mixture to a mixing bowl and add Formula 1 and Protein Drink Mix, mixing with a spoon and then your hands until the mixture is well-combined and the consistency of modeling clay. (The mixture should just hold together, and not be wet or sticky. If it is too try to hold together, add more oat milk a teaspoon at a time. If the mixture seems to sticky, add more Formula 1, a teaspoon at a time). Divide the mixture into 8 equal portions, and roll each portion into a smooth ball and place on the waxed paper.
Dip one end of the cake pop stick into the melted chocolate, coating the bottom ½” of the stick, and insert the coated end of the stick into one cake pop. Return cake pop to the waxed paper, standing it on its top. Continue with remaining sticks and cake pops. Dip each cake pop into the melted chocolate, coating completely, then sprinkle with any toppings of your choice. As you finish each one, stand the cake pops in a cake pop stand or insert the stick into a piece of Styrofoam, and set aside at room temperature for several hours until chocolate coating has hardened. Cake pops can be kept at room temperature for up to 3 days. Makes 8 cake pops.
