Makchang gui, or BBQed intestines, are, without a doubt, Daegu’s most famous food. A Korean BBQ specialty that can now be found across the country originated in Daegu and the surrounding province.
The makchang craze began in the 1960s, when a large slaughterhouse moved near the city. Soon, restaurants were popping up all over, selling their own version of the entrails. Now, Daegu even has it’s own street dedicated to the dish.
And there is no mystery as to why it gained so much popularity so quickly: it simply tastes delicious. The Makchang is served golden brown and is then roasted further over a charcoal yeontan brick. The crunchy skin melts quickly into and soft and chewy texture. And when paired with soju, the rich fatty meat compliments the alcohol perfectly. This is Anju at it’s finest!
We selected a 맛집 recommended by a friend and avoided the famous makchang street for this one. Jeongmin makchang stands on a busy corner of Daegu, and diners enjoy the BBQ in the open air. The makchang is cooked expertly before being served with an incredible sauce and fresh vegetables.
