Niger seed powder full recipe :
Niger seeds - ¾ cup / 105 gm
Sesame seeds - ¼ cup / 30 gm
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Curry leaves - few
Garlic - 7 cloves
Tamarind - 1-inch ball
Salt - 1 tsp
Red chilli - 4
Oil - 1 tsp
Process:
To a pan on low heat, add oil, red chilli, garlic, curry leaves, cumin seeds, mustard seeds and let them splutter. Slowly add sesame seeds and niger seeds and toast for 5 minutes.
Add salt and tamarind to the mixture.
Let the mixture cool completely and blend into a coarse powder.
Adjust spices according to your taste/preference and serve with hot rice.
