Powdered sugar, for garnish https://amzn.to/2IcoHHE
Instructions:
Preheat the oven to 325°F(160°C).
Sift flour into a large bowl. Add butter, 1 oz powdered sugar, yolks, salt and lemon zest. Beat with mixer until combined.
Using hands, form dough into a ball. Cover the bowl with cling wrap and refrigerate for 15 minutes.
Using a rolling pin, roll out dough to 1-inch thickness. Cut out circles with cookie cutter.
Line baking pan with parchment paper and place cookies on it. Bake for 10 minutes. Set aside to cool.
Beat chestnut puree, 4 oz powdered sugar and heavy cream in large bowl with mixer. Add cinnamon and vanilla extract and beat well.
Place puree in a piping bag.
Place cookies on a serving plate. Top each with a strawberry and frost with chestnut puree.
Sprinkle with powdered sugar.
