In this video I show you what I eat in a day like an olympic athlete, Morgan Mitchell. Morgan Mitchell is a plant-based athlete who competed in the Rio Olympics in 2016 and is also about to compete at the 2020 Tokyo Olympic Games. ingredients:
1 red onion
olive oil
a block firm tofu
1 beyond burger patty
1 can pinto beans
1/3 cup frozen corn
spices: smoked paprika, cumin and turmeric
salt and pepper
1/4 can tomato puree (or just use 1 chopped fresh tomato!)
Served in a wrap with some greens and avocado. You could add vegan cheese here if you'd like!

= beyond burger 🍔
I served mine with olive bread instead of a burger bun because I LOVE olive bread! I also added in avocado, some lettuce and tomato sauce. Served up with some homemade potato chips!

Protein mousse recipe:
30g protein powder
7g cocoa powder
100g plant-based yoghurt
stir it all up (you may need to add a splash of water to help it combine
then serve with a bit of PB :)

AND for those of you who've taken the time to scroll down and read this whole caption, I have also decided to add in the macros for the day:
Protein: 121g (23%)
Carbs:201g (38%)
Fats: 90g (39%)
The calories were pretty standard for me (around 2100), but the macros were quite different to what I'm used to. I typically eat around 45% carbs, 30% fat and 25% protein, whereas on this day of eating there was significantly more fats and a bit less carbs. Overall though it's not that different to how I'd usually eat and it was super fun to try out some new recipes. I did miss my oats for breakfast though 😅
