Mini Matcha Cheesecakes 🍵 Easy No-Bake Dessert

Ingredients:
Base:
graham crackers - 80g
melted butter - 40g
Filling:
cream cheese - 260g
sugar - 50g
vanilla extract - 1 tsp
milk - 35g
gelatin - 6g
white chocolate chips - 60g
heavy cream - 155g
matcha powder - 7g
heavy cream - 60g
Preparation:
Cheesecake Base
1. Mix together the melted butter and graham cracker crumbs. Then press a few tablespoons of graham cracker crumbs into the bottom of each mold.
2. Place in the fridge while making the filling.
Cheesecake Filling
1. Place the cream cheese in a bowl and beat with an electric mixer until smooth.
2. Add in the vanilla extract and sugar and mix until combined.
3. Mix together the gelatin and milk in a small bowl. Add some boiling water in a separate bowl and continue mixing the gelatin above it.
4. Once the gelatin mixture is thinner, add it to the filling , and mix together until fully combined.
5. Melt the white chocolate chips in a microwave, add heavy cream and mix until combined.
6. Add the chocolate mixture to the filling and mix until smooth.
7. Set aside 200g of the filling to the separate bowl.
8. Mix together matcha and heavy cream and add to the filling.
9. Pour the matcha filling 1/3 full into the molds, cover and place to the fridge to set for 15 mins.
10. Take the cheesecakes out of refrigerator and pour the next layer of the filling. Place to the freezer to set for about 3 hours.
11. Place some matcha green tea powder into a mesh sieve and dust over the entire surface.
