Andhra Chicken Fry Recipe:
Chicken (Boneless) - 500 gram
Gingelly Oil - ½ Cup
Onion - 3 nos
Ginger Garlic Paste - 1 ½ tbsp
Kashmiri Red Chilli Powder - 2 tbsp
Lemon Juice - 1 ½ tbsp
Green Chilli - 3 nos
Curry Leaves - 15 nos
Salt - To Taste
Coriander leaves - 1 tbsp
Water - ½ Cup
Instructions:
1. Wash the chicken with some salt, turmeric powder, and water
2. Heat a pan, add gingelly oil, thinly sliced onion and saute for a minute.
3. Add ginger-garlic paste and cook until raw smell leaves.
4. Add the washed chicken and saute for a minute.
5. Add Kashmiri Chilli powder, Salt and continue to cook for 2 mins
6. Add ½ Cup of water and continue to cook for 5 mins or until most of the water evaporates.
7. Switch off the flame, add the lemon juice, roughly chopped green chilli and curry leaves.
8. Serve this hot as an appetizer.
Mushroom Masala Recipe:
Mushroom - 200 grams
Oil - 2 tbsp
Bay Leaf - 2 nos
Cumin Seeds - 1 tsp
Cinnamon - 1 inch
Cloves - 3 nos
Cardamom seeds - of 2 Cardamom
Onion - 3 nos
Garlic - 7 Cloves
Ginger - 1 inch
Green Chilli - 1 no
Tomato - 2 nos
Turmeric Powder - ¼ tsp
Cumin Powder - 1 tsp
Red Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Coriander Leaves - 1 tbsp
Salt - To taste
Water - ¼ Cup + ¼ Cup
Instructions:
1. Wash, clean and chop the mushrooms.
2. Grind the cinnamon, cloves, cardamom seeds, garlic, ginger, green chilli and tomatoes together in a mixer grinder with ¼ Cup water. Keep this paste aside.
3. Heat a pan, add oil. Once the oil is hot add the cumin seeds, bay leaf. Let the cumin seeds splutter.
4. Add finely chopped onion and saute until the onions are golden brown.
5. Add the ground paste and continue cooking for a minute.
6. Add turmeric powder, salt, coriander powder, cumin powder, red chilli powder and cook until the oil separates from the masala. Add ¼ Cup of water.
7. Add the chopped mushrooms to the gravy.
8. Cook until the mushrooms are soft and well cooked.
9. Add coriander leaves and remove from the heat.
10. Serve hot with Roti/Chapati.
Lemon Rice Recipe:
Cooked Rice - 3 Cups
Gingelly Oil - 2 tbsp
Peanuts - 2 tbsp
Mustard Seeds - ½ tsp
Dried Red Chilli - 2 nos
Split Urad Dal - ½ tsp
Chana Dal - ½ tsp
Green Chilli (chopped) - 1 tbsp
Curry Leaves - 20 nos
Asafoetida / Hing Powder - A Pinch
Salt - 1 tsp
Turmeric Powder - ¼ tsp
Sugar - ¼ tsp
Lemon Juice - 2 tbsp
Coriander Leaves (chopped) - 1 tbsp
Cooking Instructions:
1. In a pan, heat up 1 tbsp of gingelly oil and roast the peanuts on a medium flame for 1 minute. Remove them from the oil and set aside.
2. Add 1 tbsp of oil to the same pan and add mustard seeds. When the mustard seeds start to splutter, add the split urad dal, chana dal, dry red chilli and green chilli. Saute until the chana dal starts to turn golden brown. Add in the curry leaves, asafoetida, salt, and turmeric powder.
3. Add the cooked rice, lemon juice and sugar. Mix well. Taste and adjust the salt.
4. Add the roasted peanuts and coriander leaves. Mix well and turn off the heat.
Cooking Tips:
1. This recipe is a delicious way of using up the leftover cooked rice. If you are cooking rice for this recipe, cook 1 cup of raw rice in 2 ½ cups of water.
2. You can substitute the Gingelly oil with any other oil, as per your preference.
Egg Kheema Masala Recipe:
Egg - 5 nos
Oil - 1 tbsp
Black Peppercorns - ½ tsp
Onion - 2 no
Tomato (finely chopped) - 2 no
Ginger garlic paste - 2 tsp
Red Chilli Powder - 1 tsp
Garam Masala - 1 tsp
Turmeric - ¼ tsp
Salt - To taste
Water - 1 ½ Cup
Black Pepper Powder - ¼ tsp
Coriander Leaves - 1 tbsp
Cooking Instructions:
1. Hard boil 5 eggs, peel and grate the eggs.
2. Heat oil in a pan, add peppercorns and allow them to slightly pop.
3. Add the onions and saute it till they turn golden brown.
4. Add the ginger-garlic paste and cook until raw smell leaves.
5. Add the tomatoes and mix
6. Add salt, turmeric powder, red chilli powder, garam masala and cook for 3 minutes
7. Add the grated egg. Mix and add water.
8. Cook until everything comes together. Add Pepper powder, coriander leaves and mix well.
9. Remove from the heat and serve hot with Chapati/Roti.
