EASY Salmon Teriyaki Onigiri

This recipe is so easy and tastes amazing!! You can either enjoy the salmon with a side of rice and vegetables, or turn it into onigiri as shown.
Ingredients
salmon
salt + pepper
1 tbsp cornstarch
oil + butter
1 tbsp mirin
1 tbsp soy sauce
1 tbsp sake
medium grain Japanese rice
seaweed strips
Instructions
1. Pat dry salmon and season with salt and pepper on both sides. Dredge with cornstarch, the shake off excess.
2. Heat oil in a pan on medium high heat and add the salmon, skin side down. Cook for about 2 minutes until it has a nice sear. Then flip over to the other side and add the butter. Cook for another 1-2 minutes but do not cook entirely since it will cook again later when we add the sauce.
3. Mix the sake, mirin, soy sauce and sugar in a bowl. Remove the oil from the pan and add the teriyaki sauce. Cook on medium heat until it’s slightly thick, then add back the salmon move it all around so the sauce glazes the salmon. Remove from heat and pour the remaining sauce on top.
4. Wet your hands and grab a handful of medium grain rice. Form it into a ball, make an indentation, then add salon pieces. Enclose it and form it into a triangle using your hands, as shown in the video. Wet hands again as necessary to prevent stickiness.
5. Add a seaweed sheet to the bottom and enjoy!
