How to Make Teriyaki Spam Onigirazu (Recipe)

INGREDIENTS: (makes 2)
1/2 can spam
2 eggs
2-3 leaves lettuce
2 cups cooked Japanese rice
2 sheets nori
1 tbsp soy sauce
1 tbsp mirin
1 tbsp sugar
DIRECTIONS:
FIrst, tear lettuce leaves into smaller pieces. Whisk the eggs and set side. Cut four slices out of 1/2 can of spam. Heat oil in a frying pan and wipe away excess with a paper towel. Pour half the egg mixture and swirl it around to make a thin omelette. Once edges are dry, fold edges to the center to make a square omelette. Repeat once more with the rest of the egg mixture.
Next, cook the spam slices on both sides until slightly crispy. Combine sugar, mirin and soy sauce and pour over the spam slices. Coat both sides of the spam and cook until sauce is slightly thick.
To assemble the onigirazu, put a sheet of nori on a sheet of plastic wrap. Put 1/4 cup of cooked rice in the center. Season with a little salt and place lettuce leaves on top, followed by 2 slices of spam. Make sure to place spam slices diagonally so that the flat sides of the spam are facing the corners of the nori sheet. Top it off with another 1/4 cup of rice.
Gather the pointy ends of the nori sheet and bring them inwards. Then wrap it up tightly with the plastic wrap. Let it sit for at least 10 minutes before cutting into the onirigaru.
TIP:
Remember which side your spam is facing because you want to slice the onigirazu across the spam slices for better presentation.
