NIHARI RECIPE-NALLI NIHARI-NIHARI MASALA
Ingredients for Mutton Nihari recipe:
Cooking Oil - 1 Cup
Black Peppercorn - 1 Teaspoon
Coriander Seeds - Tablespoon
Cumin - 1 Teaspoon
Cinnamon - 1 - 2 Inch Piece
Star anise 1
Black Cardamom - 2 Pieces
Green cardamom 5
Cloves 6
Mace - 1 Piece
Bay leaves 2
Turmeric - 1 Teaspoon
Salt - 2 Teaspoon
Red Chili Powder - 2 Teaspoon
Water approx. 4 cups
Coriander leaves few
Nihari recipe is a slow and spicy cooking curry, made with beef or lamb. The dish originated in Old Delhi in the late eighteenth century during the last releases of the Mughal empire. The nobles ate Nihari early in the morning and then took a long nap before going to the 'Zohar' (Muslim prayers in the afternoon). Later, Nihari recipe became popular among the working class as a regular breakfast item. This Nalli Nihari is eaten with Roti or Naan. The dish has a stew like consistency. It is spicy with generous amounts of red chili peppers. The curry is prepared by frying crushed onions and spices. The meat, the masala and the water are combined, brought to a boil. The pot is covered tight. . After about an hour, the meat has become very tender. The broth is thickened by cooking after the temper or tadka. Finally, the dish is garnished with chopped fresh coriander.
Serve nalli nihari with roti or naan....
