These aubergine vegan involtini were inspired by a classic Nigella Lawson recipe. I'm not a huge fan of aubergine (eggplant), but these little rolls really are terrific. They're wonderfully light, yet absolutely bursting with bright, summery flavours; perfect for munching with a beer or a glass of wine.
I had my involtini cold, but feel free to warm them in the oven/air fryer if you'd prefer. You could try pan frying them, but they will be somewhat delicate!
Although the aubergine vegan involtini are brilliant as is, I'll add a couple of sauces under "Mentioned Links" that you could serve with them; a rich and flavourful roast red pepper sauce, and a vibrant basil & lemon dressing.

Aubergine Vegan Involtini Ingredients:
300g (10.58oz) Extra Firm Tofu
10g (0.35oz) Fresh Mint Leaves (around 4 tbl once finely shredded)
1-2 tbl Extra Virgin Olive Oil
Juice of 1 Lemon (2 - 3 tbl)
2 tsp Light Soy Sauce
¼ - ½ tsp Black Pepper (to taste)
¼ tsp Nutritional Yeast (optional)
5 Bird’s Eye Chiles (use whichever chiles you like!)
2 tbl Flat Leaf Parsley (chopped)
3 medium Aubergines (Eggplants. Use larger ones if you’re slicing with a knife. See pinned comment for a note)
4-6 tbl Extra Virgin Olive Oil (for frying the aubergine slices)
Salt & Pepper (for frying the aubergine slices)
Dried Mixed Herbs (for frying the aubergine slices)

My channel is you watching the results of my 2am thoughts of “I wonder what would happen if I put A with B?” The answers lean heavily towards cake, and my ongoing quest to find a good meat substitute. I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
Grab a vessel of whatever makes you happy and enjoy, but be warned; it’s messy here sometimes!
