This savoury polenta cake is brilliant as a comfort food, and it's also great for batch cooking and freezing. The cheesy polenta itself is rich and delicious, and the two fillings I picked go together really well to make one incredible cake! Feel free to use any filling you like in here, this recipe is less about "you can use ONLY these ingredients" and more about trying out the concept of layering the polenta to get something sliceable. Have a look further down the description; I'll add links to any other videos that I think will work in here.

I meant to mention this in the video but completely forgot; the cake would be made extra special with a dressing! I'll link to a few down below as well for you

Savoury Polenta Cake Ingredients:
Old Bay Cauliflower Filling: (I only used half this quantity)
2 tbl Olive Oil
1 medium Cauliflower
2 tbl Old Bay Seasoning
¼ tsp Black Pepper
2 tbl Tomato Puree (tomato paste)
400g (14.10oz) can of Chopped Tomatoes
⅕ can of Water (used to get all the tomato goodness out of the can!)
¼ tsp Sugar
¼ tsp Cayenne Pepper
¼ tsp Toasted Cumin (ground)
1 Red Bell Pepper

Creamy Spinach & Broad Bean Filling: (I only used a third of this quantity)
1 tbl Olive Oil
65g (1 cup/2.29oz) Toasted Walnuts
1 large White Onion
250g (1 cup/8.81oz) Frozen Chopped Spinach
½ tsp Salt
½ tsp Black Pepper
2 tbl Za’atar
1 tsp Garlic Powder
350g (12.34oz) Silken Tofu
4 tbl Coconut Cream (optional, but recommended)
½ tsp Lemon Juice
250g (1 cup/8.81oz) Frozen Broad Beans

Cheesy Polenta:
600ml (2½ cups/20.28fl oz) Plant Milk
1000ml (4 cups+2 tbl/33.81fl oz) Boiling Water
4 tbl Nutritional Yeast
½ tsp Salt
140g (1⅓ sticks/4.93oz) Vegan Butter
400g (2½ cups/14.10oz) Polenta
280g (9.87oz) Extra Mature Vegan Cheddar

I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
Grab a vessel of whatever makes you happy and enjoy, but be warned; it’s messy here sometimes!
