Ah Pa's wife most favorite dish | Yu Xiang Qie Zi (Sichuan-Style "Fish-Fragrant" Eggplant)

Описание: Yu Xiang Qie Zi (Sichuan-Style "Fish-Fragrant" Eggplant). Fish fragrant (yu xiang) is actually one type of cooking style, which usually combines ginger, garlic, minced meat and bean paste together to give it a full body flavoured dish. And Eggplant is one of the most commonly used main ingredients to go with this style of cooking method. Ah Pa was told (after making this video), that we can keep nicer purple colour for the eggplant if we soaked them into some white vinegar diluted water, perhaps Ah Pa will try it one day.

Ingredients:
300g of eggplant (cut into approx. 5cm (2inchs) lengths)
40g of minced pork or minced chicken (marinate with light soya sauce and Shaoxing wine)
1 tablespoon of chopped ginger
1 tablespoon of chopped garlic
1tablespoon of chopped bird’s eye chili

Sauce:
1 small bowl of water
1 tablespoon of Lee Kum Kee chili bean sauce
1 tablespoon of black vinegar
2 tablespoons of light soya sauce
Pinch of salt
Pinch of sugar
1 to 2 teaspoons of corn starch (mix well with water)
Few dashes of white pepper

Garnishing:
Chopped fresh spring onion
