Gol Gappa Platter:
Ingredients for Gol gappay
Semolina 1 cup
Flour 2 tbsp
Salt as required
Sweet soda ¼ tsp
Warm water as required
Oil for frying
Ingredients for Khatta pani
Water 2 cup
Tamarind pulp 1 cup
vinegar 1 tbsp
Salt as required
Black salt 1 tsp
Carom 1 tsp
Nosader 1 tsp
Asafetida ½ tsp
Cumin crushed 1 tsp
Coriander chopped 1 tbsp
Mint chopped 1 tbsp
Ingredients for Meethi chutney
Dates 1 cup
Sugar ¼ cup
Cumin crushed 1 tsp
Red food color few drops
Corn four as required
Water as required
Ingredients to assemble
Gol gappay as required
Sour water as required
Meethi chutney as required
Yogurt sweet as required
Boiled chickpeas as required
Boiled potatoes as required
Method
Gol gappay bananay kay liye ek mixing bowl men suji or tamam ajza dal ker warm water kay sath achi tarhan goondh lain phir dough ko 10 se 15 minutes kay rest de ker bareek bail lain or gol cutter ki madad se kat ker plate men lagatay jae phir plate ko geelay kapray se cover ker lain. Ab dosry taraf karahi men oil ko taiz garam ker lain phir ek ek ker kay gol gappay fry ker lain.
Khatta pani bananay kay liye blender men pani, imli ka pulp or tamam ajza dal ker blend ker lain or phir pani ko fridge men rakh ker thanda ker lain.
Meethi chautney bananay kay liye pan men khjoor, sugar or pani dal ker itna pakaen kay khajoor ka paste ban jae phir cutter zeera, food color or mazeed pani dalker 1 se 2 minutes tak paka lain phir corn flour dal ker chutney ko garha ker lain.
Gol gappay platter banany kay liye platter men meethi chutney, meetha dahi, khatta pani or gol gappon men aloo or chanay dal ker serve karen.
Farmaishi faluda:
Ingredients
Corn flour 1 cup
Water 2 cups
Sugar 1tbsp
Food color few drops
Chilled water 1 bowl
Ice cubes 8 - 10
Rabri as required
Milk 1 liter
Sugar ½ cup
Qalaqand 2 pieces
Small cardamom 2 - 3
Ingredients to assemble
Faluda as required
Rabri as required
Chia seeds as required
Fruit cocktail as required
Ice cream single scoop
Red & green jelly as required
Almonds slices as required
Method
Faluda banany kay liye ek sauce pan men 1 cup corn flour, 2 cups pani or 1 khanay ka chamcha chini dal ker mix ker lain phir sauce pan ko choolhay per rakh ker bilkul dhimi aanch per pakaen or chamcahy ke mustaqil chalatay jaen takay lumps na banain jab mixture ready ho jae ek bowl men pani or baraf dal ker faluda maker ki madad se faluda banana shuru karen.
Rabri bananay kay liye sauce pan men milk, sugar or ilaichi dal ker dhimi aanch per itna paknay dain kay milk 25% reduce hojae phir qalaqand dal ker achi tarhan mix karen or mazeed 1 se 2 minutes tak paka ker choola band ker dain.
Faluda glass ready ker kay kay liye glass men sab se pehlay tukhum malanga dalain phir faluda sivayyan phir fruit cocktail, rabri, ice cream, red & green jelly or phir badam dal ker glass ko final ker lain.
