These super easy and delicious almond butter biscuits are the perfect bite-sized treats to have on hand ready to enjoy with a nice cuppa. They also make a wonderful gift for friends, family or colleagues.
The original recipe comes from my mother in law Talia Goldberg, and was first published in Now for Something Sweet in 2020.
RECIPE
60 g raw almonds
225 g (1 1/2 cups) plain (all-purpose) flour
60 g (1/4 cup) caster (superfine) sugar
1/4 teaspoon salt
100 g unsalted butter, at room temperature
1 egg yolk
40 ml (2 tablespoons) oil
Preheat the oven to 160℃ . Line a large baking tray.
In a food processor, coarsely chop the almonds. Remove from the bowl and set aside. Put the flour, sugar and salt into the food processor and process to combine. Add the butter and pulse until crumbs are formed. Add the chopped almonds and pulse to combine. In a cup, mix together the egg and oil and add to the mixture in the food processor. Pulse just until a rough dough is formed and tip the dough onto the bench.
Take a small-walnut sized piece of dough (around 8 g), lightly knead in your hand and roll it into a small sausage, about 7 cm (xx in) in length. If it cracks, knead a little more. Make a small loop, overlapping the ends and sealing to close. Place on the prepared tray. Repeat with the remaining dough. Bake for 20 minutes or until light golden underneath. They should remain pale on the top. Makes approximately 60 biscuits.
