Refreshing, sweet and delicious blueberry tart, with lemon filling and shortbread crust.
For the crust (enough for 20 cm diameter tarts):
-100 g butter, room temperature
-80 g powdered sugar
-1 pinch of salt
-1 egg
-190 g flour
Double filling ingredients to make two tarts, or keep the remaining dough in the fridge for the next tart.
For the lemon filling:
-2 egg yolks
-70 g brown sugar
-1 1/2 tbsp flour
-200 ml heavy cream (or whipping cream)
-25 g butter
-1/2 lemon zest
130 g fresh blueberries
