Grilled Vidalia Onions - Best Recipe Ever!

This side dish will knock your socks off and tastes amazing with grilled meat or as a beautiful vegetarian option. The onion caramelizes and creates a wonderful flavor. You can make this ahead of time and refrigerate until you are ready to grill. If you want to stay with whole food cooking use the ghee and coconut amino option. Both versions are delicious.
1 Large Vidalia onion (or sweet onion if you can't find Vidalia)
2T soy sauce (or coconut amino)
2T butter (or Ghee)
Salt and Pepper
1 teaspoon olive oil (to put on the foil)
Serves 4-6 people.
-Preheat oven or grill (indirect heat) 350-400 degrees
-Slice the top of the onion off (keep the root intact)
-Peel the skin off
-Core the middle of the onion (just a little to house the butter)
-Slice the onions in sections of 8
-Rip off two large sheets of aluminum foil and layer on top of each other like a plus sign
-Put 1 teaspoon olive oil the top sheet of foil
-Place the onion on top of the foil
-Fold one sheet of the foil up towards the onion (creating a bowl)
-Place the butter (or ghee) inside the cored area
-Pour soy sauce (or coconut amino) over the onion
-Seal the foil creating a top to hold onto
-Do the same with the second layer of foil
-Place on the grill for 25 minutes
Serve (you can keep in in the foil if you want, great for campground living as well)
