🧾 RECIPE – PANEER STUFFED GATTE KI SABZI
For Gatte Dough:
Besan – 1 cup
Curd – ½ cup
Salt – to taste
Red chilli powder – ½ tsp
Turmeric – ¼ tsp
Ajwain – ½ tsp
Oil – 1 tbsp
Water – as needed
For Paneer Stuffing:
Crumbled paneer – 150 gm
Onion (finely chopped) – 1 small
Green chilli – 1
Ginger-garlic paste – 1 tsp
Coriander powder – ½ tsp
Garam masala – ½ tsp
Salt – to taste
Fresh coriander
For Gravy:
Oil – 2 tbsp
Cumin seeds – 1 tsp
Onion paste – 2 medium
Ginger-garlic paste – 1 tbsp
Tomato puree – 1 cup
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Turmeric – ½ tsp
Curd – ½ cup
Garam masala – ½ tsp
Water – as needed
Method:
Mix all gatte dough ingredients and make soft dough.
Divide dough, flatten, add paneer stuffing, seal and shape into logs.
Boil in salted water for 8–10 minutes. Cool and cut into pieces.
Heat oil, add cumin, onion paste, ginger-garlic, and sauté till golden.
Add spices, tomato puree, and cook till oil separates.
Lower flame, add curd, mix well.
Add water for gravy consistency.
Add gatte pieces, simmer 5–7 minutes.
Sprinkle garam masala & coriander. Serve hot.
