This viennoiseries is also called imagination,
We need to make 3 color of croissants dough , from
light color, medium and dark to create beautiful
3D effect.
Dough 1 - 500g of croissants dough
4g matcha green tea powder
5g water
165g Laminating butter
Dough 2 - 500g of croissants dough
6g matcha green tea powder
6g water
165g butter for laminating
Dough 3 - 500g of croissants dough
12.5g matcha green tea powder
10g water
165g laminating butter
Method - Combine water and matcha green
Tea powder. Mix til turn into paste.
Add mixture into a dough and mix
In slow mixer setting approx 3min.
Shaped the dough into ball ,
wrap loosely with cling film
and keep into a 4c fridge overnight.
Laminating process: 1 book fold and 1 single fold.
Proof Croissants at 27 degree Celsius with 75percent humidity.
Baked at pre heated oven 160 degree Celsius
18 -20min.
