Ingredients
For the cookies:
½ c. coconut oil, room temp
½ c. vegan butter, room temp
3 eggs
1 c. organic sugar
½ c. organic brown sugar
¼ c.brandy
1 tsp allspice
1 tsp nutmeg
1 tsp cinnamon
½ tsp salt
2 tsp baking powder
½ c. dark cocoa powder
3 c. flour, plus 1 c. for working with dough
1 c. walnuts, chopped
For the frosting:
2 c. powdered sugar
¼ c. water or plant-based milk
Instructions
Preheat your oven to 325°F.
Cream together the coconut oil, vegan butter, sugars, and eggs in a large mixing bowl. Add the brandy and mix well.
In a separate bowl, combine the spices, salt, baking powder, cocoa powder, and flour. Gradually add the dry ingredients to the wet ingredients, mixing with your hands until a firm dough forms.
Fold in the chopped walnuts gently. Shape the dough into 1-inch strips, cut into small pieces, and roll into balls. Place the cookies ¾ inch apart on a baking sheet.
Bake for 15 minutes, until firm on the outside but still soft in the center. Cool on a wire rack.
For the frosting, whisk together powdered sugar and plant-based milk. Frost the cooled cookies and decorate with festive sprinkles if desired.
