Hi everyone
Today evening I prepared a very special and tasty snack using tomatoes harvested from my own garden – Tomato Bajji.
I harvested 6 fresh tomatoes and prepared the bajji batter using 100 grams of gram flour, salt, ajwain, and water. After resting the batter for half an hour, I dipped the tomatoes in some cup of gram flour first and then in bajji batter to get a perfect round shape and deep fried them until golden brown.
Then I fried peanuts and corn flakes in the same oil for extra crunch. After that, I cut the bajjis, removed the tomato pulp, and made small edible bowls.
I added red chilli powder and salt to the tomato pulp, mixed puffed rice, fried peanuts, and corn flakes, and filled this mixture into the bajji bowls.
Finally, I garnished with fresh coriander leaves.
The taste was absolutely amazing! My son loved it and said it was excellent.
This is a perfect crispy, tangy, and crunchy evening snack.
