Описание:
Canning bruschetta topping using water bath method. A Ball tested recipe.
Ingredients:
9 cups (3 lbs) plum or Roma tomatoes, diced. Fill jars to 1/2” headspace.
Fill with brining solution that has simmered for 5 minutes.
Brining solution ingredients:
1/2 Cup water
2 Tbsp sugar
2 tbsp dried basil
2 Tbsp dried oregano
2 Tbsp balsamic vinegar
1 Cup dry white wine
1 Cup white wine vinegar
6 cloves garlic, minced
Process in boiling water bath for 20 minutes at altitudes below 1000 feet. Add 5 minutes for each additional 1000 feet altitude.
