Ingredients
MEATBALLS
2lbs - ground chicken
1 medium size onion finely chopped
3 cloves of garlic crushed
2 eggs
3/4 cup bread crumbs
3/4 cup grated Parmesan cheese
2 tbs - Olive oil
2 tsp - salt
1 tsp - black pepper
1 tsp - dried basil
1/2 tsp - oregano
1/4 tsp - hot pepper flakes
1/4 cup - dried parsley
1/2 cup milk
Mix well and form into 3/4 to 1 inch meatballs. Set on large cookie sheet lined with parchment paper.
Start your grill and set it to 350ºF. Once temp as been reached put your meatball tray on your grill and shut grill lid. After 15 minutes flip each meatball over and return to grill for another 10 minutes. After 10 minutes remove meatballs from grill and let them cool down. You are now ready to start your Italian soup.
SOUP
5 tbs Olive oil
1-1/2 cup on diced carrots
1-1/2 cup diced celery
1 large onion chopped
2 tbs - dried basil
1tbs - oregano
1 tbs - thyme
2 tbs - salt
1-1/2 tbs - black pepper
12 cups of low sodium chicken broth
36 oz of diced Roma tomatoes
1 small can of tomato paste
6 cups of cooked shell noodles
8 cups of loose spinach leaves
Add the olive oil to a large soup pot and turn heat to medium high. Once oil has heated add carrots and celery and let cook for 5 minutes stirring often. After 5 minutes add onions and spices. Add chicken broth to pan and let boil for 5 minutes. After 5 minutes add diced tomatoes, tomato paste and stir until well mixed. Add meatballs, pasta and spinach leaves. After spinach leaves have wilted and before soup boils, remove from heat and serve. Serving suggestions is to add some Parmesan Cheese over top to add more flavor. As if it needs it but why not...
