Once the fish is gutted and descaled and rinsed in cold water, it's ready for steaming. Steaming is one of the healthiest cooking method as it doesn't involve any fat while cooking and it also helps keep the freshness of the seafood flavour.
Caution: Be careful when removing the fish from the steamer as the plate can get quite hot.
**Tip: You could also use a small bowl or chopsticks to replace the steaming rack **
Steaming Fish:
1. Place some spring onions beneath the fish. This leaves some space at bottom for even cooking.
2. Placing ginger inside the fish for added fragrance.
Add a steam rack in a wok filled with some water and wait till it boils.
3. Steam in simmering water for 12 minutes.
The fish fin will also say 'Hello' when it's ready! Remove the fish from the wok and garnish it with some shredded spring onions on top.
Sizzling oil technique:
4. Heat a wok with some oil in it, add some shredded ginger and let it sizzle for a bit.
5. Top the fish with the ginger using the sizzling oil technique.
6. Season with some Lee Kum Kee light soy sauce. Serve immediately and enjoy!
