Potato Knish Log
Oil pastry:
•1 -1/4 cup flour
•1/3 cup lukewarm water
•1/3 cup oil
•1/2 tsp fine sea salt
In a mixer fitted with the paddle attachment mix oil, water and salt. Add the flour. Mix well. Shape dough into a ball and then press into a disc about 3"-4" in diameter. Wrap in plastic wrap and let rest at room temperature for half an hour or refrigerate overnight.
Filling:
• 5 large or 10 medium yellow potatoes, peeled and cut into 1" cubes
• 2 large onions, sliced thin
• Olive oil, granulated garlic, kosher salt, freshly ground black pepper, non dairy milk (I used oat)
In a medium pot, cover potatoes with water and bring to a simmer. Cook 15-20 minutes until tender. Remove from heat and drain. Mash, adding a splash each of parve milk and olive oil and salt, pepper, and garlic powder to taste.
In a large skillet or sauteuse, over medium high heat, sautee onion and 1/4 tsp kosher salt, in 2 Tbsp olive oil until light brown, about 15-20 minutes.
Combine potatos and onion. Taste. Add additional seasoning if you'd like
To assemble:
Roll dough between two pieces of parchment into an approximately 10"×13 "rectangle. Place potato filling in middle of dough and carefully roll the dough over the filling from the top and bottom, using the parchment to help you. Flip over carefully leaving the folded dough edges underneath. Brush top with beaten egg and cut slits approximately 1" apart. Optional: sprinkle with sesame seeds. Bake at 350 for 50-60 minutes until golden brown.
Let cool and cut slices all the way through.
(Freezes beautifully when wrapped well)
