Focaccia from frozen pizza dough? Yes! Elevate frozen pizza balls into restaurant-style focaccia with cherry tomatoes, pesto, porchetta, and fresh mozzarella. Perfect Saturday slow-down recipe.
🛒 INGREDIENTS (9x9 pan)
• 2 frozen pizza dough balls (250 g each)
• 2 cups cherry tomatoes, halved
• ¼ tsp dried oregano
• 2 Tbsp extra virgin olive oil (divided)
• 1 Tbsp pesto
• Thin slices porchetta (3-4 pieces)
• Fresh mozzarella cheese
• Sea salt

📋 INSTRUCTIONS
Thaw & Prep:
• Thaw 2 dough balls in covered bowl until doubled (fridge overnight or counter 3-4 hrs).
• Generously oil 9x9 inch baking pan with 1 Tbsp EVOO.
Shape & Dimple:
• Spread dough evenly into pan (no rolling—use oiled fingers).
• Press fingertips deep into dough to create signature focaccia dimples.
Top & Proof:
• Sprinkle oregano evenly.
• Press cherry tomato halves cut-side down into dimples.
• Finish with sea salt. Cover, rest 30 min @ room temp.
Bake:
• Preheat oven 425°F.
• Bake 20-25 min until golden, crusty edges, tomatoes burst.
• Cool on rack 10 min.
Serve Two Ways:
As Is: Pull apart warm with olive oil dip.
Sandwich: Slice square → 1 Tbsp pesto → porchetta slices → fresh mozz → EVOO + salt.
