INGREDIENTS:
• 3 cups (400 g) all-purpose flour
• 1 tsp (5 g) salt
• 2 tsp (7.5 g) baking powder
• 1/3 cup (65 g) fat (lard, shortening, or butter – room temperature)
• 8 fl oz (236 ml) hot water (hot, not boiling)
INSTRUCTIONS:
1. Mix flour, salt, and baking powder in a large bowl.
2. Add room-temperature fat and hot water; mix until shaggy.
3. Knead 2–3 minutes until semi-smooth.
4. Cover and rest dough for 15 minutes.
5. Weigh dough and divide evenly (about 15 pieces).
6. Roll into smooth dough balls.
7. Roll each ball into a 6-inch round.
8. Keep rolled tortillas covered.
9. Heat cast-iron pan over medium-high; lightly grease.
10. Cook until bubbles puff, flip once, and finish.
11. Stack cooked tortillas and keep warm until serving.
