🍎 Ingredients (I'm omitting the aioli ingredients since that was f*cked)
• 1 fennel bulb, thinly sliced
• 2 oz. / 56 ml. olive oil
• 2 leeks, white part only, washed and thinly sliced
• 2 small white onions, thinly sliced
• 4 garlic cloves, crushed
• 18 oz. / 500 g. canned Italian plum tomatoes
• 2 lb. / 900 g. tiny fish, like Porgies or Whiting, whole and gutted
• 1 ½ lb. / 675. whole Red Snapper with head reserved, scaled, gutted, cut into 4 steaks through spine
• 1 bouquet garni, (thyme, parsley, bay leaf)
• peel and juice of ½ an orange
• 5-7 pistils saffron
• 1 healthy shot / 28 ml. Pernod (I used sambuca)
• about 20 small red bliss potatoes (I got a mixed bag)
• 4, u10 scallops
• 12 fresh shrimp, ideally heads on and unpeeled
• salt and pepper
🫕 Equipment
• cake thermo
• large, wide, heavy-bottomed pot
• fine strainer, cheesecloth would be nice too
• plastic wrap
• medium sauce pan
• ladle
• serving platter
