Home-Style Potato Rolls:
1 ½ cups warm water
1 cup soy milk
2 tbsp vegan butter
1 (1/4-ounce) package yeast
5-5 ½ cups all-purpose flour, or a blend of white and wheat
2 tbsp brown sugar
2 ¼ tsp salt
1 ¼ cups cold, moist mashed potatoes, preferably Yukon gold
Glaze:
1/3 cup soy milk
1 ½ tsp cornstarch
poppy seeds for sprinkling
