Double Boiled Soup Within One Hour. Double boil is one method of cooking that uses "indirect" heat to cook. In most cases, the heat was through water. So chinese believe this method not only will prevend the ingredient to be burned, it also can cook up a very concentrated soup. It is actually widely used to make herbal soups and bird nest soup. The biggest challenge to this method of cooking is that, it usually needed hours to cook slowly, therefore requires extra attentions especially to look after the water level as u don't want water to be fully evaporated. Ingredients:
2 crushed garlic and 2 slides of ginger
Old chicken feet, wings and bone
4 to 6 small size dried scallops (soaked in Shaoxing cooking wine)
1 dried oyster (soaked in Shaoxing cooking wine)
Some dried squid slices (soaked in Shaoxing cooking wine)
1 dried shitake mushroom with stem (soaked in water)
Some fish maws (soaked in water together with shitake mushroom)
1 bowl of filtered water
Mushroom water
