After some early snow, it's time to harvest my cabbage. Join me as I prepare two gut-healthy fermented cabbage recipes: saurkraut and curtido (a fermented cabbage dish from El Salvador).

Curtido Recipe
Ingredients:
1 head of green cabbage, cored and finely sliced
1 C. shredded carrot
2 medium onions, finely sliced
jalapenos to taste (I used about 1 tsp. finely chopped)
1 Tbs. oregano
1 tsp. cumin
1.5 Tbs. salt
Directions:
Toss ingredients together so seasonings are evenly distributed. Pound mixture (with spoon or meat tenderizer) or massage mixture with hands for about 10 min. The mixture is ready when it has released a pool of juice into the bottom of the bowl. Tightly pack mixture into a clean 2-quart jar or crock. Tamp mixture down so it is immersed in juice. Use a weight to hold mixture beneath the surface of the liquid. Set at room temperature for 3 days. Taste and refrigerate.
