The creaminess of the Boursin cheese makes a great base for not only flavor, but the sauce as well. Now i used shrimp here, but any fish, or chicken will work just fine.
The tomatoes I used had been in the fridge for a few days, and I needed to use them, and this was the perfect way to utilize them before going bad.
Have some fun with this one, add whatever ingredients that YOU like! This is just a base recipe that is super versatile and can be modified to your palette and likes.
