INGREDIENTS
For the Lava Cakes
100 g dark chocolate (70%)
100 g unsalted butter
2 eggs
1 egg yolk
70 g sugar
25 g flour
10 g cocoa powder
1 g salt (pinch)
4 tsp Biscoff spread (cold, for the centers)
For the ramekins
Melted butter (for brushing)
Cocoa powder or sugar (for dusting)
METHOD
Prep the centers:
Scoop 4 teaspoons of Biscoff spread onto a small tray lined with baking paper. Freeze for 30 minutes until firm.
Melt chocolate & butter:
Melt together the dark chocolate and butter bain-marie style until smooth (about 55–60°C). Set aside to cool slightly.
Whisk eggs & sugar:
In a bowl, whisk eggs, yolk, and sugar until pale and slightly thickened.
Combine:
Pour the melted chocolate mixture into the egg mixture and whisk gently until smooth.
Add dry ingredients:
Sift in flour, cocoa powder, and salt. Fold until just combined.
Prepare ramekins:
Brush 4 ramekins (6–8 cm) with melted butter, then dust with cocoa or sugar. Tap out excess.
Fill & freeze:
Spoon half the batter into the ramekins, place one frozen Biscoff scoop in the center, then cover with remaining batter.
Freeze for 15–20 minutes to help the centers stay molten.
Bake:
Bake at 200°C (fan 180°C) for 11–13 minutes, until the edges are set but the centers jiggle slightly.
Serve:
Let rest 1 minute, run a knife around the edges, and invert onto plates. Serve immediately with ice cream or cream.
