Healthy meals without overthinking it.
This white chickpea chili is one of those meals I actually stick to:

• about 10 minutes

White Chickpea Chili (Easy One-Pot)
• 1 yellow onion, diced
• 1 red pepper, diced
• 1 jalapeño, ribs & seeds removed, diced
• 5 cloves garlic, sliced
• 1½ tbsp cumin
• 1 tsp chili powder
• 1 tsp coriander
• 1 tsp oregano
• 2 cans chickpeas, drained & rinsed
• 1 can pinto beans, drained & rinsed
• 16 oz salsa verde
• 1 can light coconut milk
• 2 cups veggie broth
• Juice of 1 lime
• Salt & pepper
Sauté onion, pepper, jalapeño, and garlic in a splash of broth for 4–5 minutes.
Add spices and toast 1 minute.
Stir in everything else, bring to a boil, then simmer 10 minutes.
Finish with lime juice. Done.
