📍Sukiyaki Sauce (Serves 4)
Soy sauce … 130ml
Mirin … 130ml
Sake … 130ml
Sugar … 4 tablespoons
📝Simmer for 1-2 minutes to evaporate the alcohol.
Lightly sear the meat first, then add a small amount of the sauce to enhance the savory aroma and flavor.
📍Brown Rice Blend Amazake
Rice koji … 200g
Lukewarm water … 300ml
Cold cooked brown rice … 50–80g
📝Combine rice koji, brown rice, and lukewarm water. Mix well. Ferment at 55–60°C for 6–8 hours. Higher temperatures cause over-fermentation and sourness.
📍Chocolate Nut Bagel
Bread flour … 300g
Unsweetened cocoa powder … 20g
Sugar … 25g
Salt … 5g
Dry yeast … 3g
Milk … 200ml
📝Combine dry ingredients in a bowl. Add milk and dry yeast, then knead until combined. Knead vigorously for about 10 minutes. Divide the dough in half. Mix one half with a small amount of cocoa powder dissolved in hot water. Divide each half into 6 pieces, stack them, and let rise for 30-50 minutes (until doubled). Shape into rings and let rise again for at least 50 minutes.
→ Boil each side for 30 seconds in water with 1 tbsp sugar.
Preheat oven to 200°C (392°F). Bake for 15 minutes.
