Chicken Cacciatore - Italian Hunter's Style Chicken

Serves: 4 guests
2 ½ lbs. Chicken Legs / Thighs
½ cup Bacon Lardons
2 cups Crimini Mushrooms, quartered & sliced
4 cloves Garlic, whole / peeled
1 cup Red Onion, sliced
1 cup Peppers, Hungarian Wax or Cubanelle
½ cup White Wine, dry
1 quart Marinara
2 cups Tomatoes, diced
2 Tbsp. Olive Oil
Procedure:
1. Preheat Dutch oven, add 1 Tbsp. oil and bacon. Render fat on low heat until bacon gets almost crispy.
2. Add the mushrooms. Cook until done, remove bacon & mushrooms from the pot.
3. Add 2 Tbsp. oil and sear the chicken on all sides until lightly browned.
4. Add garlic, onions and peppers. Cook for 5 minutes.
5. Deglaze with wine. Cook for a few minutes then add mushrooms and bacon back to the pot.
6. Top with marinara and diced tomatoes. Cover and braise for about 30 - 45 minutes or until chicken is tender. Serve over pasta, rice or potatoes.
