Browning the meat and deglazing with the reserved marinade builds layers of flavour, resulting in a glossy, intensely flavoured gravy that anchors the dish.
Finished with a smooth, cheese-forward macaroni layer and baked until bubbling and golden, this dish is equally suited to a family-style bake or elegant individual portions. A final brush of melted butter and a scattering of fresh chives add aroma and sheen, balancing richness with freshness. Optional Oxtail Wash
Juice of 1–2 limes (2–3 tbsp / 30–45 ml)
Cold water, as needed
Oxtail Layer
2 lb / 900 g oxtail, trimmed
1½ tbsp / 22 ml browning sauce
1½ tbsp / 22 ml soy sauce
2 tsp / 10 ml Worcestershire sauce
2 tsp / 7 g all-purpose seasoning
¾ tsp / 1.5 g dried thyme
¾ tsp / 1.5 g paprika
⅓ tsp / 0.5 g ground allspice
⅓ tsp / 0.5 g freshly ground black pepper
1½ tbsp / 22 ml vegetable oil
¾ medium onion, chopped (about 150 g)
2 scallions, chopped (about 30 g)
3 garlic cloves, minced
1 whole scotch bonnet pepper
3 cups / 720 ml beef stock
2 tsp / 10 ml ketchup (optional)
Salt, to taste
Macaroni & Cheese Layer
¾ lb / 340 g elbow macaroni
3 tbsp / 42 g unsalted butter
3 tbsp / 23 g all-purpose flour
2¼ cups / 540 ml whole milk, warmed
¾ cup / 180 ml heavy cream
1½ cups / 120 g sharp cheddar cheese, shredded
1 cup / 100 g mozzarella cheese, shredded
⅓ cup / 50 g red Leicester , shredded
¾ tsp / 1.5 g mustard powder
¾ tsp / 1.5 g onion powder
⅓ tsp / 0.5 g garlic powder
⅓ tsp / 0.5 g paprika
Salt and freshly ground black pepper, to taste
Finishing
3 tbsp / 42 g unsalted butter, melted
1–2 tbsp / 5–10 g finely chopped fresh chives
Optional: ⅓ cup / 20 g panko breadcrumbs, buttered
