Jarda Pulao
Golden saffron-hued rice sweetened with sugar, enriched with dry fruits, and kissed with cardamom fragrance. This festive pulao shines like the mustard fields of Basant Panchami—sweet, aromatic, and celebratory.
🥗 Matar Makhana Sabji
A vrat-friendly delight where tender green peas meet crunchy makhana in a light tomato-cashew gravy. Balanced spices make it wholesome yet indulgent, perfect for the auspicious day.
🫓 Laccha Paratha
Layered, flaky, and soft—laccha paratha brings the comforting touch of tradition. Crisp on the outside, melt-in-mouth inside, it pairs beautifully with the sabji and adds rustic charm to the festive thali.
(Jarda Pulao--)
Basmati rice – 1 cup
Sugar – ½ cup
Ghee – 2 tbsp
Saffron strands – 8–10 (soaked in warm milk)
Cardamom – 3–4 pods
Dry fruits – almonds, cashews, raisins (2 tbsp each)
Yellow food color (optional, for festive look)
Water – 2 cups
(Matar Makhana Sabji ---)
Makhana (fox nuts) – 1 cup
Green peas – 1 cup (fresh or frozen)
Tomato – 2 medium (pureed)
Cashew paste – 2 tbsp
Green chili – 1 (finely chopped)
Ginger paste – 1 tsp
Cumin seeds – ½ tsp
Turmeric powder – ¼ tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt – to taste
Ghee or oil – 2 tbsp
( Laccha Paratha---)
Wheat flour – 2 cups
Salt – ½ tsp
Ghee/oil – 2 tbsp (for dough)
Water – as needed (to knead)
Extra ghee/oil – for roasting
