Recipe for the Sweet Pongal or Sihi Pongal posted in the video -
Ingredients:
Moong Dal or Yellow Split Gram - 1 Cup
Rice - 1 Cup
Jaggery - 2 to 2 and 1/4 Cups
Ghee or Clarified Butter - 1/2 Cup + 4 Tbsp
Grated Coconut - 1/2 Cup
Cardamom Powder - 1 tsp
Salt - 1/4 tsp
Cashew Nuts - 4 Tbsp
Raisins - 10-15
Method :
1. Add 1 Cup Moong Dal to a pan. Roast in medium flame for 5 minutes or till you can smell the aroma of the Dal. Transfer to a bowl and leave it to cool completely.
2. Now to the Moong Dal bowl, add 1 Cup Rice. Wash these two 3-4 times and keep aside.
3. Transfer Rice and Dal to a pressure cooker. Add 5 Cups of Water and cook till you hear 3-4 whistles.
4. Now to another vessel, add 2 and 1/4 Cup of Jaggery and 1 Cup of water. Place on a stove and melt the Jaggery to obtain Jaggery water. Strain the Jaggery water using a strainer to remove the impurities. Keep aside.
5. To a big pan, add cooked Dal and Rice. Add strained Jaggery Water. Mix well and remove the lumps from the Rice and Dal mixture.
6. Cook this mixture in medium flame for 5 minutes.
7. Now add 1/2 Cup grated fresh Coconut and mix well.
8. Now add 1 tsp Cardamom Powder and mix the ingredients.
9. Add 1/4 tsp Salt. Adding Salt will enhance the taste of the Sweet Pongal/Sihi Pongal. I usually add Salt to Jaggery based Sweets to remove blandness in the preparation.
10. Now add 1/2 Cup Ghee or Clarified Butter and mix everything once.
11. Cook in medium flame for 20 minutes by stirring continuously. Once cooked for 20 minutes, the Rice and Dal will mix thoroughly with Jaggery and Ghee. This process will enhance the taste of the Sweet Pongal.
12. Now take a small frying pan. Add 2 Tbsp Ghee. Once Ghee melts, add Cashews and fry till they turn golden in colour. Add this to the prepared Sweet Pongal and mix well.
13. To the same frying pan, add 2 Tbsp of Ghee. Once Ghee melts, add Raisins and fry till they turn golden in colour and fluff up. Add the fried Raisins and mix well to the Sweet Pongal.
