I'm sharing my absolute favourite way to make Bolognese! AND it's Paleo!
I have had a long love affair with Italian cooking. Since childhood I have always been enamoured with Italian flavours and recipes. For a very long time it was all I cooked. But when I began my Paleo journey, I had to come to terms with giving up a number of Italian dishes. Bolognese, however, was not one of them.
This is my version of a classic bolognese, but keeping it Paleo. It's full of tons of deep, rich, delicious flavours that are always a favourite in my house. Super easy, super healthy and not overcomplicating. This is a rustic, simple dish that will win over any Paleo non-believer. Serve with some zucchini noodles, or paleo gnocchi and rejoice in all of its Paleo glory!

Ingredients:
2lbs grass-fed lean ground beef (or any other ground meat will do)
1 large carrot shredded
1 large red onion diced
1.5 celery stalks diced
1 head of garlic smashed
3 anchovy filets with some of the packing oil
1 bunch fresh thyme
1 tin organic tomato paste
Chicken stock (enough to cover the ground meat)
Olive oil
Salt and Pepper to taste
Crushed red chilli flakes (optional)
