Happy Bakery’s version of Vanilice (Serbian Cookies)
Vanilice are Serbian traditional cookies with jam filling, coated in powdered sugar.
INGREDIENTS:
For the cookies:
125 g margarine
40 g sugar
1 egg
12 g vanilla
250 g flour
sprinkles (optional)
jam (any flavour)
For the coating:
vanilla powder
powdered sugar
INSTRUCTIONS:
In a medium bowl, mix together margarine and sugar until creamy.
Beat in the egg until well combined.
Pour in vanilla then gradually add flour until it forms a dough.
Let the dough rest and chill for 15 minutes.
Preheat oven to 160 C (320 F).
Dust small amount of flour on a flat surface and roll the dough into 1.27 cm (1/2 inch) thick.
Add sprinkles on the dough and roll it once more, you can skip this part if you want to keep it plain.
Using 4 cm round cookie cutter, cut the dough into circles.
Place on a baking sheet with parchment paper and bake for 12 minutes or until golden brown.
While the cookies are baking, prepare the jam of choice and place it in a pastry bag.
Remove the cookies from the oven and let them cool completely.
When the cookies are ready, take one and squeeze a small amount of jam. Top it with another cookie to make sandwiches.
Set aside once done.
In a small bowl, mix together vanilla powder and powdered sugar.
Sprinkle the powdered sugar mixture on top of the cookies until well coated.
The cookies can be stored in an airtight container for 2 weeks.
